I am an Italian and Pizza expert. I have eaten pizza in Chicago, Youngstown, Florida, Philadelphia, New England, Jersey City and New York. My father was adopted and his bio parents were born in Italy. I have traveled to Sicily a number of times. I was a cook for awhile to. This why I am qualified to say Casa Bianca is the best Pizza in Southern California.
I went to Casa Bianca my first night in Los Angeles almost a year ago after a friend from Youngstown who owns a great nameless Italian joint recommended it. He said, "this is the only real Italiano place out there." I went there and I felt like I had stepped into an old Youngstown pizza parlor. They all have the old feel like its still 1950. The people looked more Italian then Hispanic and many places around here advertise Italian/Central American. The prices are not far from Domino's. The smell was like back home. The lines were long but thats good pizza for you. The severs were polite leading to the table.
The pizza was truly how it should be there was not a lack of sauce like California pizza's are notorious for. Instead the pizza head an appropriate layer of sauce seasoned with garlic, oregano, fennel and I think basil. The crust was nice fluff but firm. The cheese was probably mozzarella laced with Parmesan. The sausage was well seasoned, the pepperoni was the right volume and season and the mushrooms were fresh tasting. This really created a magic taste. I got to say la prova e nel gusto or the proof is in the taste.
The only short comings are things that have less of a market on the west coast considering the white people are mostly English or Irish. These things are sfincione or stuffed pizza more pie like than a calzone, the strong coffees, gelato and other deserts and some of the wines can't be found. I think its pretty good for out here and I recommend it.
